I am a cheese lover. Always willing to try a new one. I also like Manchego. I have only had the hard version. I love doing things with fresh mozzarella. My favorites are an English Cotswald and believe it or not St Andre spread on crisp Apple slices.

Hmmm Let me think on that one. My truffle centers are chocolate and whipping cream so I imagine the liquor is thinning the mix. My first instinct is too add more chocolate but........ Let me check out some recipes and get back to you.
