I hosted a brunch for Mother's Day and wanted a different champagne cocktail to serve than the traditional mimosa. I decided on pear mimosas and they were a huge hit! They were quite tasty and best of all, super simple!

Pear Mimosa

2 bottles brut champagne
4 cups pear nectar

Mix. Serve Chilled. Garnish with pear slice or lime wedge.

The Pear Mimosa looks and sounds delicious.
Since Champagne is a bit on the high end of the cost factor, my favorite go-to fizzy drink is Procecco (Italian Sparkling White Wine) with the same taste and feel of a Champagne. Perhaps a bit sweeter, but great value for the cost, between $9 - $15-ish a bottle.
Procecco can be served just like Champagne with appetizers or mixed with a fruit of choice for a garnish or flavoring in the glass.
Looking forward to some feedback on Procecco.

A brief note on recycling the leftover fruit from Sangria :)
I saved some saturated fruit from this weekend when I served Sangria (homemade, of course :) and found that if you put the saturated fruit or the juice in a tall glass, fill it with ice and Club Soda, it made a very refreshing, low-calorie drink the next evening with dinner.
How's that for being resourceful with leftovers?

I think the name Wine Spritzer (homemade of course) sound interesting. I will have to research how to make one. Probably could be made with either white or red, perhaps a rose. (needs an accent mark, I know.)

A Bellini is simple and delicious. I do not have a picture, sorry. Ingredients are Peach Schnapps and Prosecco (Italian Sparkling White Wine). The exact recipe can be looked up on-line. The drink color is peach.
This is a nice brunch drink or serving with appetizers in spring/summer.
